7 Tips for Great Pies

1. To glaze a pie, brush with 1 egg white beaten with 1
tbsp. (15 mL) milk, before baking. 

2. For a crisp french pastry effect, sift powdered sugar
over pie crust. Dress up any pie with whipped cream. Cheese can
be served with any pie but especially with apple pie.

3. If fruit pies or other fillings lack flavor, add a
little lemon juice, grated lemon rind, or baking spices. To
alter sweetness, make with more or less sugar.

4. Pie fillings can be made thicker or thinner, by
altering the amount of flour or cornstarch used in the pie
fillings.

5. Pies are best served, the day they are baked,
especially custard or cream pies. Crusts with soft fillings will
loose their crispness after one day. To freshen up a pie: heat
in a 375 F (190 C) oven for about 12 minutes. Let the pie cool
and then serve.. 

6. Fruit pies freeze well for three to six months,
chiffon pies for up to one month. But, custard or cream pies do
not freeze well at all.
